My 30 days of cooking diary -> Day 2

Let’s start our day with good food. I always question myself “eating low calorized food is better option or eating normal food in a small quantity is better option”. And I always give up my mind in front of my heart. My heart says eat good food in less quantity. I know it’s quite funny as because I am a foodie person. Food is such a thing it can transform your bad mood to better mood. Sometimes the same item in a slight twist gives a new taste and new look. So, I try to do something like that. Hope you all enjoy it while making it and eating it.

 

Day 2 Breakfast menu:


Roti, Egg bhurji, sauteed broccoli mushroom with a touch of oregano

 


 Roti recipe


Ingredients required for roti:


 (1) 1 cup of whole wheat flour

 (2) a pinch of salt

 (3)1/3 cup of warm water.


Process of making roti:


(1) In a bowl, take 1 cup of whole wheat flour, add a pinch of salt, 1/3 cup of warm water and mix well.

(2) Knead the dough and let the dough rest for 15 minutes.

(3) Heat the tawa in medium-high flame.

(4) Make 5 dough balls.

(5) Roll evenly the dough ball using a rolling pin.

(6) Put the roti on the tawa and cook well.

(7) Keep a roti jali or steel wire roaster on top of the stove’s flame and put the cooked roti on top of it. Once it rounds in shape. The roti is done.

 

Egg Bhurji recipe


Ingredients required for egg bhuji:


(1) 1 tbsp olive oil or vegetable oil

(2) 1 small onion

(3) 1 green chili

(4) 1/8th tsp turmeric

(5) 1/8th tsp chili powder

(6) 1/8th tsp pepper powder

(7) 2 eggs and salt as per the taste.


Process of making egg bhuji:


(1) Heat 1 tbsp oil in a pan.

(2) Add 1 small onion and 1 green chili (cut into small pieces) and sauté them till onions become golden blown.

(3) Then add a pinch of turmeric and a pinch of chili powder and salt as per the taste. Mix well everything.

(4) Now add the two whisked egg mixture and mix them well with onion and chili. Add a pinch of pepper powder.

(5) Keep stirring the eggs until they are scrambled well. Switch off the heat once they are cooked well.

(6) Garnish the egg bhurji with spring onion and serve hot with roti.

 

Sautéed broccoli mushroom with a touch of oregano recipe


Ingredients required for Sautéed broccoli mushroom with a touch of oregano:



 (1) Wash and wipe ½ cup mushroom and broccoli.

(2) Heat the pan, add 1 tbsp salted butter.

(3) Add mushroom (each mushroom cut into 4 pieces) and fry for 5 minutes in medium flame.

(4) Add broccoli (cut into medium pieces) and fry mushroom and broccoli for another 3 minutes.

(5) Add 1/8th tsp salt and 1/8th tsp white pepper powder and mix well.

(6) Sauté it for another 2 minutes and then add fresh oregano leaves. Now serve hot with roti.

 

Ingredients: ½ cup mushroom, ½ cup broccoli, 1 tbsp salted butter, 1/8th tsp salt, 1/8th tsp white pepper powder, some oregano leaves.

 

Day 2 Lunch menu:


Jeera rice, Plain dal, Aloo gobi fry, Cucumber Salad, Rasam, Garlic chutney, Papad and Savory salted lassi

 



Jeera rice recipe


Ingredients required foor jeera rice:


(1) 1 cup rice

(2) 1 spoon salt

(3) 2 tbsp ghee

(4) ½ tsp cumin

(5) 2 green chilis

(6) 2 tbsp cashew.


Process of making jeera rice:


(1) Boil 1 cup of rice in 3 cups of water and add 1 spoon salt.

(2) Once rice is cooked 80%, filter the rice.

(3) Heat a pan in a medium flame. Add 2 tbsp of ghee, add ½ tsp cumin and let it sputter.

(4) Add two green chilis slit into two pieces, add 2 tbsp cashew and fry till it brown.

(5) Now mix rice with all the above in a low flame. Serve hot with dal.

   

Plain Dal


Ingrediants required for plain dal: 


(1) 1/3rd cup toor dal

(2) 1/4th tsp turmeric powder

(3) a half tomato

(4) salt as per your taste

(5) 1 tsp ghee

(6) 1 tbsp mustard oil

(7) ½ tsp cumin seeds

(8) 2 garlic cloves

(9) 1/4th of 1 onion

(10) 2 red chilies

(11) 1 tbsp coriander leaves.


Process of making plain dal:


(1) In a pressure cooker, add 1/3rd cup of toor dal, 1 & 1/2 cup of water, 1/4th tsp turmeric powder, half of a tomato, ½ spoon salt.

(2) Boil the dal for 2 whistles then switch off the stove. Let the cooker release the pressure.

(3) Add a spoon ghee in the dal and mix well.

(4) Heat the tadka pan, add 1 tbsp vegetable oil (mustard oil taste very good for this tadka), add ½ tsp cumin seeds, 2 garlic cloves, few onions cut pieces, 2 red chilies.

(5) Fry till the garlic and onion turn brown.

(6) Add the tadka mix to the dal and mix well and again boil for another 5 minutes.

(7) Now add 1 tbsp coriander leaves in the dal and server with rice.

 

Aloo gobi fry recipe


Ingredients required for aloo gobi fry:


(1) 1 cup cauliflower

(2) 1 medium size potato

(3) 1 tbsp olive oil/vegetable oil

(4) 1/4th tsp cumin seeds

(5) 1/4th tsp mustard seeds

(6) 1 red chili

(7) ½ tsp turmeric powder

(8) ½ tsp chili powder

(9) salt to taste

(10) 1/4th tsp garam masala.


Process of making aloo gobi fry:


(1) Cut 1 cup of cauliflower and put it in turmeric water for few minutes. Then wash it properly and wipe it.

(2) Cut 1 medium potato in small cubes.

(3) Heat a frying pan in medium flame, add 1 tbsp of vegetable oil or olive oil.

(4) Add 1/4th tsp cumin seeds, 1/4th tsp mustard seeds, 1 red chili. And fry till the cumin and mustard splutters.

(5) Add the potatoes and fry for 5 minutes in medium flame. Then add cauliflower and fry till aloo gobi half cooked.

(6) Now add ½ tsp turmeric powder, ½ tsp chili powder and salt to taste.

(7) Sauté for another 5 minutes.

(8) Add 1/4th tsp garam masala and mix well. Switch off the stove and cover it.

(9) Serve with rice and dal.

 

Cucumber salad


Ingredients required for cucumber salad:


(1) 1 cucumber

(2) few cherry tomatoes or ½ small size tomato

(3) 1/4th of a lemon

(4) 1/6th tsp pepper powder.


Process of making cucumber salad:


(1) Cut one cucumber and few cherry tomatoes in small pieces.

(2) Add ½ tsp lemon juice, little pepper powder and salt to taste. Mix well and server immediately.

(3) Always add salt just before you eat the salad otherwise it will release water and the salad won’t taste good.

 

Savory salted lassi recipe


Ingredients required for savory salted lassi:


(1) 2 tbsp yogurt

(2) 1/4th tsp salt

(3) a pinch cumin powder.


Process of making savory salted lassi:


(1) In a blender, add 2 tbsp of thick yogurt, 1/4th tsp salt, a pinch cumin powder and 2/3 cup water.

(2) Grind it and server it.

 

Garlic chutney recipe 


Ingredients required for garlic chutney:


(1) 2 cloves garlic

(2) 2 tbsp peanuts

(3) 1 tbsp sesame seeds

(4) 2 tbsp grated dry coconut

(5) 1 tsp Kashmiri chili powder

(6) salt to taste.


Process of making garlic chutney:


(1) Fry 2 cloves garlic, 2 tbsp of peanuts, 1 tbsp sesame seed, 2 tbsp of grated dry coconut separately till it turn slight brown and let those cool properly.

(2) In a mixer add all those ingredients with 1 tsp of Kashmir chili powder and salt as per your taste. Grind them in a coarse powder.

 

Rasam recipe


Ingredients required for rasam:


(1) 2 small tomatoes

(2) a pinch turmeric

(3) few drops of mustard oil

(4) 2 tsp tamarind juice

(5) 1 green chili cut in two pieces

(6) 1/4th red chili powder

(7) 2 tsp vegetable oil

(8) ½ tsp panch phoron

(9) 1 pinch hing/ asafetida

(10) 2 garlic cloves

(11) 2 small red chilies

(12) few curry leaves

(13) 1/6th tsp  urad dal 

(14) few coriander leaves.

 

Process of making rasam:


(1) Boil 2 small tomatoes (cut into small cubes) in 2 cups of water in medium flame.

(2) Add salt to taste, a pinch turmeric, few drops of mustard oil, 2 tsp tamarind juice, 1 green chili cut in two pieces and 1/4th red chili powder. Let it boil till the tomatoes are cooked fully.

(3) Heat a tadka pan in medium flame.

(4) Add 2 tsp vegetable oil, once the oil is hot enough add ½ tsp pinch phoron and wait till it splutters.

(5) Add 1 pinch hing/ asafetida, 2 crushed garlic cloves, 2 small red chilies, few curry leaves, 1/6th tsp  urad dal. Sauté till the raw smells go.

(6) Now add the tadka in boiled tomatoes water and boil for another 3-5 minutes.

(7) Add few coriander leaves and serve hot.

 

Day 2 Snacks menu:


Cookies with coconut icing and lemon grass tea

 



Cookies with coconut icing recipe


Ingredients required for cookies with coconut icing:


(1) 1 cookies pkt

(2) 1/4th cup powdered sugar

(3) ½ cup heavy cream

(4) ½ cup grated coconut

(5) 1 tsp vanilla essence.


Process of making cookies with coconut icing:


(1) I used Britannia 50-50 Sweet & Salty cookies.

(2) In a medium bowl, mix 1/4th cup powdered sugar in a ½ cup heavy cream with a spoon or electric mixer.

(3) Add ½ cup grated coconut and 1 tsp vanilla essence.

(4) mix well and decorate on top of the cookies. And server with tea.

 

Lemon grass tea recipe


Process of making for lemon grass tea:


(1) Boil a ½ cup water with 1 tsp tea powder, few dry lemon grasses and sugar as per your taste.

(2) Add ½ cup boiled milk to the tea water. And make it boil for another 5 minutes.

(3) Filter the tea and enjoy with cookies.

My 30 days of cooking diary -> Day 1

Today I feel like I will update my food menu for next 30 days. I believe, this could be helpful for those who are very new to cooking or confused what to cook on daily basis.

There is a saying “the way to anyone’s heart is through his/her stomach”. Even it has been scientifically proven that our second brain hides in our stomach. So, if you want to stay happy healthy and strong, then start preparing your favorite food and enjoy it with your family and friends.

So, here it goes the Day-1 food lunch menu :

Rice with ghee, Moong Dal tadka, Malai Shrimp, Chatpata Beans.



Rice recipe


Ingredients required for rice:

(1) 1 cup rice.

(2) 2 cups of water.


Process for making rice:


(1) For 1 cup for rice use 2 cups of water.

(2) Mix together and keep it a pressure cooker.

(3) Let it cook in medium flame till you get two whistles.

(4) Then switch off the stove and keep aside the cooker for cooling. It is ready to serve. 

Moong dal tadka recipe

Ingredients required for moong dal:

(1) 1/4th cup moong dal

(2) 1 small tomato

(3) 1/4th tsp turmeric

(4) salt as per the taste

(5) 1 n ½ cup of water

(6) 2 tsp of vegetable or olive oil

(7) 1/4th tsp mustard seeds

(8) 1 pinch hing/asafetida

(9) 1 clove garlics

(10) 2 green chilis

(11) 10-12 curry leaves

(12) 1 tbsp ghee.

Process for making moong dal:

(1) In a pan, fry 1/4th cup of raw moong dal till it turn slightly brown.

(2) Then wash properly the roasted dal.

(3) In a pressure cooker, put the washed dal with 1 small tomato cut into small pieces,1/4th tsp of turmeric, salt as per your taste and 1 & ½ cup of water. Mix well and boil in medium flame.

(4) Wait till the cooker gives 2 whistles.

(5) Switch off the stove and keep aside for cooling.

(6) In a frying pan, heat 2 spoons of vegetable oil or olive oil and splutter 1/4th tsp of mustard seeds, 1 pinch hing or asafetida, 2 clove garlic cut into small pieces, 2 green chilis cut into 4 pieces,10 to 12 curry leaves.

(7) fry the whole total till the garlic turn to brown color.

(8) Add the cooked dal and stir well adjusting the consistency as required.

(9) Simmer for 5 minutes or until flavors are well combined.

(10) Add 1 tbsp of ghee on top of it (optional).

(11) While serving add some coriander leaves on top of it.

   

Malai shrimp/prawn recipe


Ingredients required for malai shrimp:


(1) 1 tbsp of thick yogurt

(2) 1/6th tsp of turmeric

(3) 1/4th tsp of chili powder

(4) 1/4th tsp of coriander powder

(5) 1/4th tsp of cumin powder

(6) 2 green chili cut into very small pieces

(7) 1 tbsp of coriander leaves cut into small pieces

(8)1/4th tsp of mango powder

(9) 1/4th tsp of Kashmir chili powder

(10) 1 tsp of ginger garlic paste

(11) 1/2 tsp of garam masala

(12) 1/2 tsp of lemon juice

(13) 1 tbsp olive oil or vegetable oil

(14) ½ tsp of salt or according to your taste

(15) 2 tbsp of butter

(16) 1 tbsp of heavy cream.


Process for making malai shrimp:


(1) Wash 5-6 large shrimps properly.

(2)In a bowl add 1 tbsp of thick yogurt, 1/6th tsp of turmeric, 1/4th tsp of chili powder, 1/4th tsp of coriander powder, 1/4th tsp of cumin powder,2 green chili cut into very small pieces, 1 tbsp of coriander leaves cut into small pieces, 1/4th tsp of mango powder, 1/4th tsp of Kashmir chili powder, 1 tsp of ginger garlic paste, 1/4th tsp of garam masala,1/2 tsp of lemon juice, 1 tbsp olive oil or vegetable oil and ½ tsp of salt or according to your taste.

(3) Mix everything smoothly and keep it marinated for 10 minutes.

(4) Heat the pan and add 2 tbsp of butter.

(5) Add the marinated shrimps and cook for 15 minutes in medium flame.

(6) if you want, you can add little water and cover it.

(7) Once shrimp is fully cooked add 1/4th tsp of garam masala and mix well.

(8) At last add 1 tbsp of heavy cream on top of it and serve.



Chatpata Beans recipe


Ingredients required for Chatpata Beans:

(1) ½ lb. beans

(2) 1 and ½ tbsp of vegetable oil

(3) 1 tsp cumin

(4) 1/4th tsp turmeric

(5) 1/4th tsp chili powder 

(6) 1/4th tsp salt

(7) 1 tbsp *garlic chutney.


Process for making Chatpata Beans:


(1) Washed ½ lb. beans and cut into small pieces.

(2) Heat 1 and ½ tbsp of vegetable oil.

(3) Sputter 1 tsp cumin.

(4) Add the cut beans and fry in medium flame for 5 minutes.

(5) Now add 1/4th tsp of turmeric, 1/4th tsp of chili powder and 1/4th tsp of salt or according to your taste, mix well.

(6) After 5 minutes of frying beans (when beans are 90% cooked) add 1 tbsp of garlic chutney to it and mix well.

(7) Fry for another 3 minutes and chatpata beans is ready to serve.
