My 30 days of cooking diary -> Day 1

Today I feel like I will update my food menu for next 30 days. I believe, this could be helpful for those who are very new to cooking or confused what to cook on daily basis.

There is a saying “the way to anyone’s heart is through his/her stomach”. Even it has been scientifically proven that our second brain hides in our stomach. So, if you want to stay happy healthy and strong, then start preparing your favorite food and enjoy it with your family and friends.

So, here it goes the Day-1 food lunch menu :

Rice with ghee, Moong Dal tadka, Malai Shrimp, Chatpata Beans.



Rice recipe


Ingredients required for rice:

(1) 1 cup rice.

(2) 2 cups of water.


Process for making rice:


(1) For 1 cup for rice use 2 cups of water.

(2) Mix together and keep it a pressure cooker.

(3) Let it cook in medium flame till you get two whistles.

(4) Then switch off the stove and keep aside the cooker for cooling. It is ready to serve. 

Moong dal tadka recipe

Ingredients required for moong dal:

(1) 1/4th cup moong dal

(2) 1 small tomato

(3) 1/4th tsp turmeric

(4) salt as per the taste

(5) 1 n ½ cup of water

(6) 2 tsp of vegetable or olive oil

(7) 1/4th tsp mustard seeds

(8) 1 pinch hing/asafetida

(9) 1 clove garlics

(10) 2 green chilis

(11) 10-12 curry leaves

(12) 1 tbsp ghee.

Process for making moong dal:

(1) In a pan, fry 1/4th cup of raw moong dal till it turn slightly brown.

(2) Then wash properly the roasted dal.

(3) In a pressure cooker, put the washed dal with 1 small tomato cut into small pieces,1/4th tsp of turmeric, salt as per your taste and 1 & ½ cup of water. Mix well and boil in medium flame.

(4) Wait till the cooker gives 2 whistles.

(5) Switch off the stove and keep aside for cooling.

(6) In a frying pan, heat 2 spoons of vegetable oil or olive oil and splutter 1/4th tsp of mustard seeds, 1 pinch hing or asafetida, 2 clove garlic cut into small pieces, 2 green chilis cut into 4 pieces,10 to 12 curry leaves.

(7) fry the whole total till the garlic turn to brown color.

(8) Add the cooked dal and stir well adjusting the consistency as required.

(9) Simmer for 5 minutes or until flavors are well combined.

(10) Add 1 tbsp of ghee on top of it (optional).

(11) While serving add some coriander leaves on top of it.

   

Malai shrimp/prawn recipe


Ingredients required for malai shrimp:


(1) 1 tbsp of thick yogurt

(2) 1/6th tsp of turmeric

(3) 1/4th tsp of chili powder

(4) 1/4th tsp of coriander powder

(5) 1/4th tsp of cumin powder

(6) 2 green chili cut into very small pieces

(7) 1 tbsp of coriander leaves cut into small pieces

(8)1/4th tsp of mango powder

(9) 1/4th tsp of Kashmir chili powder

(10) 1 tsp of ginger garlic paste

(11) 1/2 tsp of garam masala

(12) 1/2 tsp of lemon juice

(13) 1 tbsp olive oil or vegetable oil

(14) ½ tsp of salt or according to your taste

(15) 2 tbsp of butter

(16) 1 tbsp of heavy cream.


Process for making malai shrimp:


(1) Wash 5-6 large shrimps properly.

(2)In a bowl add 1 tbsp of thick yogurt, 1/6th tsp of turmeric, 1/4th tsp of chili powder, 1/4th tsp of coriander powder, 1/4th tsp of cumin powder,2 green chili cut into very small pieces, 1 tbsp of coriander leaves cut into small pieces, 1/4th tsp of mango powder, 1/4th tsp of Kashmir chili powder, 1 tsp of ginger garlic paste, 1/4th tsp of garam masala,1/2 tsp of lemon juice, 1 tbsp olive oil or vegetable oil and ½ tsp of salt or according to your taste.

(3) Mix everything smoothly and keep it marinated for 10 minutes.

(4) Heat the pan and add 2 tbsp of butter.

(5) Add the marinated shrimps and cook for 15 minutes in medium flame.

(6) if you want, you can add little water and cover it.

(7) Once shrimp is fully cooked add 1/4th tsp of garam masala and mix well.

(8) At last add 1 tbsp of heavy cream on top of it and serve.



Chatpata Beans recipe


Ingredients required for Chatpata Beans:

(1) ½ lb. beans

(2) 1 and ½ tbsp of vegetable oil

(3) 1 tsp cumin

(4) 1/4th tsp turmeric

(5) 1/4th tsp chili powder 

(6) 1/4th tsp salt

(7) 1 tbsp *garlic chutney.


Process for making Chatpata Beans:


(1) Washed ½ lb. beans and cut into small pieces.

(2) Heat 1 and ½ tbsp of vegetable oil.

(3) Sputter 1 tsp cumin.

(4) Add the cut beans and fry in medium flame for 5 minutes.

(5) Now add 1/4th tsp of turmeric, 1/4th tsp of chili powder and 1/4th tsp of salt or according to your taste, mix well.

(6) After 5 minutes of frying beans (when beans are 90% cooked) add 1 tbsp of garlic chutney to it and mix well.

(7) Fry for another 3 minutes and chatpata beans is ready to serve.


*Garlic chutney recipe: Fry 2 cloves garlic, 2 tbsp of peanuts, 1 tbsp sesame seed, 2 tbsp of dry coconut separately till it turn slight brown and let those cool properly. In a mixer add all those ingredients with 1 tsp of Kashmiri chili powder and salt as per your taste. Grind them in a coarse powder.
