During my school days, I used to carry a dish in my lunch box that my mom used to prepare for me. It was just delicious. Most of the time I could not get chance to eat my own lunch box because my classmates would not leave anything for me. They were also kind of fond of my mom’s food. It’s one of my favorite dishes, basically it’s my mom’s dish. Today I was missing my mom, so I thought I will make one of her items. And you know what, I prepare that dish with heavy emotion recalling my childhood days and the dish came out just amazing. Then in lunch time, my family wanted to do a pool party, so I thought of making indo-chinese food which in fact was good. Hope you would like my today’s menu.
So, here it goes the Day 8: breakfast menu
Spicy flat rice fry
Spicy flat rice fry recipe
Ingredients required for spicy flat rice fry: (2 persons)
1) 1 Large potato
2) 2 green chilies (I took the less spicy one)
3) 1/4th tsp turmeric powder
4) 1 medium onion finely chopped
5) 1 cup thin flat rice
6) Your choice of Indian mixture
7) 2 tsp mustard oil
8) Salt to taste
9) 1 & 1/4th tbsp olive oil
10) ½ cup Indian mixture
Process of making spicy flat rice fry:
1) Heat a cooking pan, add 1 cup thin flat rice.
2) Fry the flat rice for 5 minutes in medium flame, then add 1 tsp olive oil, and stir it evenly.
3) Add 2 pinch of salt. Mix well
4) Transfer the fried flat rice in a plate and make it cool completely.
5) Heat the same pan, add 1 tbsp olive oil, add potato slices (which is thinly sliced in long strips)
6) Sauté it in medium flame, when potato is slightly brown, add sliced green chilies and mix well.
7) Add 1/4th tsp of turmeric powder and salt to taste. Mix well.
8) When potato is cooked and tastes crispy, transfer to a bowl. Switch off the stove.
9) In big bowl, add the fried flat rice, add mixture, add 2 tsp of mustard oil and mix well.
10) Then add crispy potatoes and chopped onion to that.
11) Mix everything and put it in a serving bowl.
Day 8: Lunch menu
Veg fried rice & paneer jalfrezi
Veg fried rice recipe
Ingredients required for veg fried rice: (for 2 person)
1) 1 cup basmati long rice
2) ½ cup of small cut vegetables (beans, carrots)
3) ½ cup of green peas and yellow corn
4) 1 tbsp & 1 tsp olive oil
5) 1 tbsp butter
6) 1 tsp pepper powder
7) Salt to taste
8) 1 tsp white chili vinegar
9) ½ tbsp chili sauce
Process of making veg fried rice:
1) Wash the rice and add 4 cups of water in 1 cup rice in a cooking pot, add 2 tsp salt, 1 tsp olive oil
2) Boil the rice in medium flame till rice is cooked 80%. Then strain the rice and keep aside.
3) Heat a frying pan, add 1 tbsp of olive oil and 1 tbsp of butter.
4) When the oil is hot enough, add all vegetables, sauté it in high flame.
5) When vegetables are half cooked, add 1 tsp pepper powder and salt to taste. Mix well.
6) Now add boiled rice, add 1 tsp white chili vinegar, add ½ tbsp chili sauce and mix well.
7) If it is required, then add salt or toss everything properly.
8) Switch off the stove and transfer toa serving bowl.
Paneer jalfrezi recipe
Ingredients required for paneer jalfrezi: (for 2 persons)
1) 3 cups of whole milk
2) 3 tbsp vinegar
3) 1 cheesecloth to filter the cheese
4) 1 tsp chili flakes
5) 1 & ½ tbsp sour cream
6) ½ green bell pepper cut into small cubes
7) ½ red large onion cut into small cubes
8) 1/4th tsp turmeric powder
9) 1 tsp chili powder
10) 1 tbsp kashmiri chili powder
11) 2 tsp coriander powder
12) 1 tsp cumin powder
13) 1 tsp amchoor powder/ mango powder
14) 1 tsp tandoor masala
15) 1 tbsp olive oil for marination
16) Salt to taste
17) 1 tsp garam masala
18) 2 tsp lemon juice
19) 1 tsp ginger paste
20) 1 tsp garlic paste
21) 1 tbsp butter
22) 1 tbsp vegetable oil/ olive oil
Process of making paneer jalfrezi:
1) Boil 3 cups of milk in a big bowl.
2) Turn off the heat immediately when the milk boils.
3) Add 3 tbsp of vinegar, stir well and cover it. The milk should start curding immediately.
4) Let the curd sit in the pot for 5 to 10 minutes.
5) Strain the curds through a cheesecloth and rinse the curds with cold water.
6) Mix 1 tsp chili flake and a pinch of salt and mix it.
7) Gather up the corners of the cloth and squeeze out the excess liquid from the cheese.
8) Keep a heavy small bowl on top of this cheesecloth, it will help to squeeze the excess water fast.
9) Then remove the cheese block from the cheesecloth and cut into small cubes.
23) In a bowl add green bell pepper, add onion cubes, paneer cubes, add 1/4th tsp turmeric powder, add 1 tsp chili powder, add 1 tbsp kashmiri chili powder, add 2 tsp coriander powder, add 1 tsp cumin powder, add 1 tsp amchoor powder, add 1 tsp tandoor masala, 1 tbsp olive oil, 1 tsp garam masala, add 2 tsp lemon juice, 1 tsp ginger paste, 1 tsp garlic paste, 1 & ½ tbsp sour cream and mix everything well. Keep it aside for 10 minutes.
10) Heat a frying pan in medium to high flame, add 1 tbsp olive oil, add 1 tbsp butter.
11) When the oil is hot enough, the marinated paneer and vegetables.
12) Sauteed it for 10 minutes in high flame.
13) Check out the veggie, if it is 80% cooked, then switch off the heat.
14) Transfer the paneer jalfrezi in a serving bowl.
