My 30 days of cooking diary -> Day 12
Today I thought to prepare oats again in breakfast. It’s one of the healthy dishes. It contains a lot of fibers. It does not need any extra oil to prepare. I have added flax seeds, which has high in omega-3 fats. And when we add different types of fruits and nuts, its flavor become different. Then in lunch time, I prepared pakhal bhat. It is very famous in Odisha district in India. During summer days, the temperature is so high there. So, people use to eat water rice to balance their body temperature. It is so refreshing. Generally, the combination of water rice or pakhal bhat and fish fry, gives a heavenly taste. Even the simple spinach fry/saag bhaja also goes very well with pakhal bhat. You may feel little heavy but it’s okay for once in a while. Me and family are having only breakfast and lunch during this covid-19 pandemic time, because we have less activities to do when we stay only at home. And we have not faced any heaviness due to food. In fact, we feel really good. So, as I say good food gives happy mood. I hope you would all like my today’s menu.

My 30 days of cooking diary -> Day 11
Today it was such a lazy day for me. When today morning I went to the kitchen I had no idea what to prepare. I thought to make some easy food. Then slowly ideas came to my mind.
The breakfast combo which, I made today, was good. It was kind of manageable. I had some leftover food which I used it in the morning, just to give a little rest to myself. I like egg related items. We can make so many dishes using egg. And these are easy to make and deliciously too. I hope, you would all like my today’s food menu.
So, here it goes the Day 11: Breakfast menu
Leftover badia parathas, boiled egg, guacamole & tea
Badia parathas recipe
Ingredients required for badia paratha: (for 1 person)
1) 1 cup whole wheat flour
2) 1 tsp salt
3) 8 tsp olive oil
4) 2/3 cup warm water
Process of making badia paratha:
1) Take a mediumbowl, add 1 cup wheat flour, add 1 tsp salt, 2/3 cup of warm water.
2) Knead the dough, then grease it with 1 tsp oil. Rest for 10 minutes
3) Make 4 dough balls out of whole dough.
4) Heat the tawa in medium-high flame.
5) Roll the dough ball in a round shape evenly by using a rolling pin. Apply a little oil on that round shaped roti.
6) Make a small cut from the middle point to the edge.
7) Then make a cone shape and then press it down slightly.
8) Use some flour and roll again to give a round shape by using rolling pin.
9) Put the raw paratha on the warmed pan, cook the both sides, after 1 minute, add 1 tsp oil on both side of the paratha, cook well till its roast properly. Then put the paratha on the rolling plate and squeeze both edge of the paratha carefully. In this process the paratha becomes softer. Even this is the reason, its name is badia paratha too.
Boiled egg
I use electric egg boiler. It is very useful kitchen appliance. It uses only 1 cup of water to boil maximum 7 eggs in just 5 minutes.
Guacamole recipe
Ingredients required for the Guacamole: (per person)
1) 1 avocado
2) ½ tsp lemon juice
3) Salt to taste
4) 1 tsp sour cream
5) 1/4th tsp chili flake
6) 1 pinch pepper powder
7) 1/4th of a medium tomato
8) 1 tbsp grated cheese
9) 1 pinch garlic powder or 1 small clove garlic chopped in small pieces
10) ½ tsp olive oil
Process of making guacamole:
1) Cut the avocado and mash it.
2) Then add all the ingredients to it and mix well. The guacamole is ready to serve.
3) It’s very easy and healthy food.
Tea recipe
Ingredients required for simple tea: (per person)
1) 1/3 cup whole milk
2) 1 tbsp milk powder
3) 1 tsp tea powder
4) 2 tsp sugar (as per your taste)
5) 2/3 cup & 2 tbsp of water
Process of making simple tea:
1) Warm 1/3 cup of whole milk and add 1 tbsp milk powder and mix well and keep aside.
2) Boil 2/3 and 2 tbsp of water in medium flame, add 1 tsp tea powder, add 2 tsp sugar. Add boil till its water’s color changes to dark coffee color.
3) Then add whole milk+ milk powder mixture into the tea water. And stirring occasionally.
4) Boil for 5 minutes in low to medium flame. Then, strain the tea and pour into small cups. It’s ready to serve.
The Day 11: lunch menu
Plain rice, egg curry, badhi chura
Plain rice recipe
Ingredients required for plain rice:
1) 1 cup of raw rice
2) 2 cups of water
Process of making plain rice:
1) For 1 cup for rice use 2 cups of water, if you are usingpressure cooker to make.
2) Mix together and keep it a pressure cooker.
3) Let it cook in medium flame till it gives two whistles.
4) Then switch off the stove and keep aside the cooker for cooling.
5) Transfer to a serving bowl.
Egg curry recipe
Ingredients required for egg curry: (per person)
1) 2 boiled eggs
2) 1 medium potato cut into 4 pieces
3) 4 cloves garlic, grate it
4) 1-inch ginger root, grate it
5) 2 green chilies chop finely
6) ½ of 1 onion chop finely
7) 2 tbsp coriander leaves
8) ½ tsp turmeric powder
9) ½ tsp chili powder
10) 1 tsp kashimiri chili powder
11) 1 tsp coriander powder
12) ½ tsp panch phoran
13) 2 tbsp olive oil
14) 1 tsp garam masala
15) 1 large tomato
Process of making egg curry:
1) Heat a cooking pan medium flame, add 1 tbsp of oil, add eggs and potato, fry it.
2) Add a pinch turmeric and fry the egg and potato till these turn brown color in both side, *turmeric helps to give nice color to egg and potato.
3) Then keep eggs and potatoes aside.
4) In the same pan, add 1 more tbsp olive oil (if you want you can add more oil), when oil is hot enough, add panch phoran, wait till it splutters.
5) Then add onions, when onion changes it color to slightly brown, add green chilies, add grated garlic & ginger, then sauté everything until the raw smell of ginger and garlic go off.
6) Make a small paste of turmeric powder, chili powder, coriander powder, Kashmiri chili powder with a little water.
7) Add that mix in the cooking pan, mix well.
8) After 3-4 minutes, add tomato cut into small pieces.
9) Add a little salt and sauté it.
10) Cook the tomato, mix well.
11) Cook until the oil separates, then add fried eggs and potatoes, and mix well.
12) Add salt to taste.
13) Cover it and cook for 5 minutes in low to medium flame.
14) Then add 1 cup hot water and mix well.
15) Adjust the salt if needed.
16) After 10 minutes of cooking, add 1 tsp garam masala and mix well.
17) When potato is cooked properly, switch off the flame and sprinkle the coriander leaves.
18) Now transfer to serving plate.
Badhi chura recipe
Ingredients required for badhi chura:
1) Making of badhi: soak ½ cup of urad dal overnight, then grind it and mix a little salt, a pinch asafetida/hing, if you have garlic leaves, then add it. Then make a small small ball and dry in the sun for 2-3 days. You can keep it in airtight box for 1 month for future use.
2) Take 10 badhi
3) 2 cloves of garlic
4) 1 green chili
5) 1 tbsp of coriander leave
6) 1 tsp mustard oil
7) Salt to taste.
Process of making badhi chura:
1) Heat a non-stick pan, add ½ tbsp mustard oil, add badhi and fry until it turns brown.
2) Then switch off the flame. Cool the badhi completely.
3) Mash the badhi, garlics, green chili, coriander leaves together.
4) Mix everything with salt and ½ tbsp of mustard oil.
5) Transfer the badhi chura to a serving bowl.
