Today I was missing those days before the covid-19 situation started. I used to go to a particular restaurant, where I used to eat BLT veggie sandwich and I liked it so much. But now I don’t think it’s possible for another few months. So, I tried to make the BLT veggie sandwich at home. And it was quite satisfactory. As I am a foodie, I always keep on searching for good taste. I don’t stop myself till I reach there. Today I feel like preparing a healthy breakfast to keep in mind to make a heavier lunch. Hope, you all would like my today’s food menu.
Here, it goes the Day 5: Breakfast menu:
Fruits & nuts Oatmeal
Fruits & nuts Oatmeal recipe
Ingredients required for fruits & nuts oatmeal: (for 2 person)
1) 1 cup whole milk (you can take low fat milk also)
2) ½ cup of “Quaker Oats Heart Healthy Quick 1-Minute Oats”
3) 1 tsp sugar
4) 2 pinch cinnamon powder
5) 1 tsp honey
6) 5 strawberries (cut each strawberry in 4 pieces)
7) 1 banana (cut into small pieces)
8) 1/3 cup blueberries (cut each blueberry in 2 pieces)
9) 1/4th cup of walnuts
10) 6 almonds (cut each almond into 4 pieces)
Process of making fruits & nuts oatmeal:
1) Boil 1 cup of milk in a cooking pot for 3 minutes in medium flame, add ½ cup of oats. Boil everything in low to medium flame.
2) Add 1 tsp of sugar, mix well.
3) Add 1 pinch of cinnamon powder in it. Mix well.
4) Switch off the stove when the oat is fully cooked.
5) Place the cooked oats in a bowl.
6) Add all fruits and nuts.
7) Dress up the oatmeal with 1 tsp honey and 1 pinch of cinnamon. And oatmeal is ready to serve.
Day 5: Lunch menu: -
BLT veggie sandwich, Lemon pepper salmon fry, French fries
BLT veggie sandwich recipe
Ingredients required for the BLT veggie sandwich:
1) For bread: 2/3 whole milk, 1 tsp yeast, 1 tsp sugar and 1 tbsp sugar, 1 tsp salt, 3 tbsp salted butter, 1 & ½ cup bread flour.
2) Few lettuces
3) 1 tomato
4) 1 avocado
5) 1/4th tsp salt
6) 1/4th tsp white pepper
7) 2 amul cheese slices per sandwich
8) 1/4th tsp chili powder (optional)
Process of making BLT veggie sandwich:
1) Making of bread:
a) Warm 2/3 cup of whole milk till the temperature reached 110-degree Fahrenheit.
b) Add 1 tsp sugar.
c) Mix well.
d) Add 1 tsp of active yeast.
e) Then cover the bowl with a towel so that the warm air could not pass.
f) It helps to activate the yeast.
g) Wait for 5 to 10 minutes till the yeast’s bobbles are created and reach up to 1-2 inch.
h) In a large bowl, add 1 & ½ cup of bread flour, 1 tbsp sugar, 1 tsp salt, mix everything properly. Then add the fermented yeast & milk in the bread flour. Mix well.
i) Knead a dough for 7 to 8 minutes.
j) Add 2 tbsp of salted butter.
k) Knead the dough again till it absorbs the butter.
l) Take a large glass or steel pot, grease with butter. Put the dough in it and cover it with a kitchen towel.
m) Keep the dough for raising for 90 minutes in warm environment.
n) Then knead the dough for another 2 minutes.
o) Grease the baking pot with butter and place the dough in it. Cover with a kitchen towel.
p) Keep the dough bowl in a warm place for another 90 minutes for raising again. It should be double in size. Before keeping it inside the oven, grease the top of the dough with a little milk. It will give a nice brown color to the bread.
q) Preheat the oven in 425-degree Fahrenheit. Then place the baking pot (in which bread dough is fermented) in the middle rack of the oven.
r) Keep another baking plate in the down rack of the oven with 1 cup of water in it. This will help the bread to be softer.
s) Let it bake for 10 minutes.
t) Then reduce the oven temperature to 375-degree Fahrenheit. And let it bake for another 15 to 20 minutes.
u) Check the bread with a food thermometer. If the bread temperature reached to 190- degrees Fahrenheit, then the bread is cooked from inside.
v) Bring out the bread from the oven and apply some butter on top of it.
w) Then keep the hot bread in a cooling rack till it cool completely.
x) Then slice it for sandwich.
2) Toast the bread with slightly rubbed butter on both sides.
3) Take a slice of bread, on top of it put tomato slices, then avocado slices, sprinkle little salt and pepper powder and chili powder.
4) Then put cheese slices and lettuce.
5) Add another slice of bread toast on the top. The BLT sandwich is ready to eat.
Lemon pepper salmon fish fry recipe
Ingredients required for Lemon pepper salmon fish fry: (for 2 persons)
1) 10oz. of salmon fish cut into two pieces (you can take any other fish instead of salmon).
2) 1 tbsp lemon-pepper salt
3) 1 tbsp chili powder
4) 1 tsp Kashmir chili powder
5) 1 tbsp garlic powder
6) ½ tsp normal salt
7) 1 tbsp olive oil to marinate
8) Canola oil to fry
Process of making “lemon pepper salmon fish fry”:
1) Wash the fish and drain the excess water.
2) Make a mix of 1 tbsp lemon-pepper salt, 1 tbsp chili powder, 1 tsp kashmiri chili powder, 1 tbsp garlic powder, 1 tsp olive oil.
3) Apply the spices mix on the fish and marinate properly. Keep it aside for 10 minutes.
4) Heat a cast iron skillet in medium flame. Add the marinated fish.
5) Fry the fish in both side for 10 minutes. Check out if the raw smells and pinkness is gone.
6) Then switch off the flame and server the fish.
7) You can garnish with a little butter and coriander leaves.
French fries recipe
Ingredients required for French fries:
1) 2 big potatoes
2) 1 tbsp corn starch
3) 1 tsp salt
4) ½ tsp chili powder
5) Canola oil to fry
Process of making French fries:
1) Wash the potatoes and peel the skin out. Cut the potatoes into long thin stripes.
2) Dip them into a bowl of iced water for 5 minutes.
3) Drain the water and wash the potatoes thoroughly.
4) Pat them dry using a kitchen towel.
5) Heat the oil in a frying pan, fry the potatoes in small batches for 30 seconds.
6) Then soak the extra oil from the potatoes and sprinkle 1 tbsp of corn starch and mix well.
7) Put it inside freezer for 30 minutes.
8) Again, fry the frozen potatoes till golden brown.
9) Then toss with salt and a little chili powder before serving.
Day 5: Snacks: -
Oatmeal raisins cookies
Oatmeal raisins recipe
Ingredientsrequired for the oatmealraisins cookies:
1) 7 tbsp butter, softened
2) 6 tbsp brownsugar
3) 1/4th cup granulated sugar
4) 1 egg
5) ½ tsp vanilla essence
6) 3/4th cup all-purpose flour
7) ½ tsp baking soda
8) ½ tsp cinnamon
9) 1/4th tsp salt (optional)
10) ½ cup raisins
11) 1 & ½ cup quaker oats (cooked or old fashioned, uncooked)
Process of making the oatmeal raisins cookies: (for 2 dozen cookies)
1) Heat oven to 350-degree Fahrenheit.
2) In a large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
3) Add egg and vanilla; beat well.
4) Add combined flour, baking soda, cinnamon and salt; mix well.
5) Add oats and raisins; mix well.
6) Drop dough by rounded tablespoonfuls onto ungreased cookies sheets.
7) Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely.
8) Store tightly covered.
