My 30 days of cooking diary -> Day 10

    Every day is a beautiful day. It’s in our hand, how interesting we can make the day or how lousily we can spend the day. But every single day will not ever come to our life. Sometimes I think, what do we mostly remember about our childhood. And the most appropriate answer is the food we had during those days we are not able to forget in our entire life. It may be good or bad, but it makes its own place deep in ours heart. Likewise, the lunch menu which, I decided to prepare today, I used to have it many times during my childhood specially on Monday. Sometimes I got bored too. But as I am away from my hometown, I am missing those foods. So, I thought, why not I will eat my old-time sake. Actually, it’s quite healthy too. Anyways, today during breakfast time, my little one suggested me what to prepare, for which I am so happy. Because, I believe, our kids should also participate in cooking decision. I just added a little twist in it, that’s it. I hope, you would all like my today’s food menu.

 

So, here it goes the Day 10: Breakfast menu

 

Macaroni with soya chunks with orange juice

 



 

Macaroni with soya chunks recipe

 

Ingredients required for macaroni with soya chunks: (for 2 persons)

 

1) 1 cup of uncooked macaroni pasta

2) 1 cup of soya chunks

3) 2 tsp olive oil

4) 2 tsp salt

5) 2 cloves of garlic finely chopped

6) ½-inch of ginger root finely chopped

7) 2 tbsp olive oil

8) 2 tsp Italian seasoning

9) 1 tsp black pepper powder

10) 3 green chilies finely chopped

11) A pinch turmeric

12) 1 tsp chili flakes

13) Salt to taste

14) 2 tomatoes chopped in small cubes

15) 1 tbsp butter

16) 1 medium onion, finely chopped

17) 1 tbsp of oregano leaves

18) ½ cup grated cheese


Process of making macaroni with soya chunks:

 

1) Heat a cooking pot in medium, add 3 cups of water, add 1 cup soya chunks, add 1 tsp salt, add 1 tsp olive oil.

2) Heat another cooking pot in medium flame, add 3 cups of water, add 1 cup of uncooked macaroni pasta, 1 tsp oil, 1 tsp salt.

3) Boil both for 10 minutes, then drain the soya chunks using a colander and put them in a iced water bowl. After few minutes, drain again the soya chunks and squeeze it to release excess water and keep aside.

4) Drain the macaroni pasta and keep aside.

5) Heat a non-stick pan, add ½ tbsp oil, add the soya chunks and sauté till its raw smell go off, then keep aside.

6) Heat the same non-stick pan/cooking pan in medium to flame, add 1 tbsp of olive oil, add finely chopped garlic & ginger, fry till the raw smell go off, then add 1 chopped green chili, 1 chopped tomato, a pinch turmeric powder, mix well, add salt to taste, mix well, then add sauteed soya chunks, mix everything properly, add Italian seasoning and do a final mix and keep aside.

7) Heat the non-stick pan in medium flame, add 1 tbsp oil, 1 tbsp butter, add finely chopped onion, sauté it till it turns slightly brown, then add chopped green chili, add 1 chopped tomato, mix well, add salt to taste, mix everything properly.

8) Add the boiled macaroni in it, saute it for another 5 minutes, then add 1 tsp Italian seasoning, 1 tbsp of oregano, mix well.

9) Now add the masala soya chunks and give a proper mix.

10) Spread ½ cup grated cheese and serve hot.


 

 

Note: Orange juice is stored bought.

 

Day 10: lunch menu: -

 

Badia paratha, Dalma, yogurt & pickle

 



 

Badia paratha recipe

 

Ingredients required for badia paratha: (for 1 person)

 

1) 1 cup whole wheat flour

2) 1 tsp salt

3) 8 tsp olive oil

4) 2/3 cup warm water

 

Process of making badia paratha:

 

1) Take a medium bowl, add 1 cup wheat flour, add 1 tsp salt, 2/3 cup of warm water.

2) Knead the dough, then grease it with 1 tsp oil. Rest for 10 minutes

3) Make 4 dough balls out of whole dough.

4) Heat the tawa in medium-high flame.

5) Roll the dough ball in a round shape evenly by using a rolling pin. Apply a little oil on that round shaped roti.

6) Make a small cut from the middle point to the edge.

7) Then make a cone shape and then press it down slightly.

8) Use some flour and roll again to give a round shape by using rolling pin.

9) Put the raw paratha on the warmed pan, cook the both sides, after 1 minute, add 1 tsp oil on both side of the paratha, cook well till its roast properly. Then put the paratha on the rolling plate and squeeze both edge of the paratha carefully. In this process the paratha becomes softer. Even this is the reason, its name is badia paratha too.

10) Likewise, make other 3 parathas.

Note: Yogurt & pickle are store bought.


Dalma recipe


Ingredients required for dalma: (for 2 people)

 

1) 1 medium potato cut into 6 pieces

2) 1 long egg plant cut into 10 pieces

3) 1 raw banana, peel it and cut into 6 pieces

4) 5 beans

5) 4 small pieces of a pumpkin

6) 1/3 cup of toor dal, wash it and soak for 15 minutes

7) 1/4th tsp turmeric powder

8) Salt to taste

9) 1 green chili finely chopped

10) 1/4th inch ginger root finely chopped

11) 3 tsp cumin seed

12) 6 red chilies

13) 1 tbsp ghee

14) ½ tbsp vegetable oil

15) 2 tbsp coriander leaves chopped in small pieces

 

Process of making dalma:

 

1) Heat the pressure cooker in medium flame, add toor dal, turmeric powder, salt to taste, add all veggies, add 1 & ½ cup of water, add 1 tbsp of coriander leaves, boil it till the cook gives 1 whistle, then switch off the heat and keep aside.

2) Heat a pan, add 2 tsp cumin seed and 4 chilies, slightly fry without oil. Then cool it completely. Grind it by using spices grinder.

3) Heat a cooking pot, add ½ tbsp vegetable oil, add 1 tsp cumin seed, 2 red chilies, let it fry till cumin starts spluttering.

4) Add boiled dalma in the cooking pot, then cook the dalma for another 5 minutes in low flame.

5) Now add cumin-chili powder (optional) in the dalma and mix well.

6) Transfer the dalma to the serving plate. Sprinkle 1 tbsp of coriander leaves.
