Today was a special day for me. It’s the birth of my very dearer one. So, I thought I will prepare his favorite food. It’s very simple menu, but for him it’s the soul food. Someday I am in a mood of preparing only oriya food. But I know myself, I could not stop to give a twist. As I already said good food gives happy mood. And specially if I eat the food which refreshes some of my childhood memories, then it would be just amazing. Today’s dishes are something like that. Hope, you all would like my today’s food menu.
Here, it goes the Day 6: Breakfast menu: -
Phulka/roti, Flat beans & aloo bhaja, tea
Phuka/roti recipe:
Ingredients required for phulka:
1) 1 cup of whole wheat flour
2) a pinch of salt
3) 1/3 cup of warm water.
Process of making phulka:
1) In a bowl, take 1 cup of whole wheat flour, add a pinch of salt, 1/3 cup of warm water and mix well.
2) Knead the dough and let the dough rest for 15 minutes.
3) Heat the tawa in medium-high flame.
4) Make 5 dough balls.
5) Roll the dough ball in round shape evenly by using a rolling pin.
5) Put the roti on the tawa and cook well.
6) Keep a roti jali or steel wire roaster on top of the stove’s flame and put the cooked roti on top of it. Once it rounds in shape. The roti is done.
Flat beans & aloo bhaja recipe
Ingredients required for flat beans & aloo bhaja: (for 2 persons)
1) 1 large potato
2) 20 flat beans
3) ½ tsp panch phoron
4) 1 red chili
5) 1/4th tsp turmeric powder
6) 1/4th tsp chili powder
7) 1/4th tsp garam masala
8) 1 & ½ tbsp vegetable/olive oil
9) Salt to taste
Process of making flat beans & aloo bhaja:
1) Wash and the potato and peel the skin out. Cut the potato into medium thin slices. And keep aside.
2) Wash the flat beans and remove each bean’s both end by 1/4th inch. Then cut flat each bean into 2 to 3 slices.
3) Heat a pan, add ½ tbsp of oil, add flat beans and fry for 5 minutes in medium flame. Then keep aside.
4) Again, in the hot pan, add sliced potato, fry for 5 minutes in low flame. Then keep aside.
5) Heat the pan, add 1 tbsp oil, add ½ tsp panch phoron, add a red chili cut into 3 pieces.
6) When phoron starts spluttering, add potato & flat beans, and mix well. Keep on sauté in low to medium flame.
7) After 5 minutes of sautéing, add 1/4th tsp turmeric powder, add 1/4th tsp chili powder and add salt to taste. Mix well.
8) Sauté everything till potato and flat beans are fully cooked, then 1/4th tsp garam masala and mix well. Serve with phulka.
Tea recipe
Ingredients required for simple tea: (per person)
1) 1/3 cup whole milk
2) 1 tbsp milk powder
3) 1 tsp tea powder
4) 2 tsp sugar (as per your taste)
5) 2/3 cup & 2 tbsp of water
Process of making simple tea:
1) Warm 1/3 cup of whole milk and add 1 tbsp milk powder and mix well and keep aside.
2) Boil 2/3 and 2 tbsp of water in medium flame, add 1 tsp tea powder, add 2 tsp sugar. Add boil till its water’s color changes to dark coffee color.
3) Then add whole milk+ milk powder mixture into the tea water. And stirring occasionally.
4) Boil for 5 minutes in low to medium flame.
5) Then strain the tea and pour into small cups and it’s ready to serve.
Day 6: Lunch menu: -
Soya chunks & jackfruits biriyani, Dahi baigan & Sooji halwa
Soya chunks & jackfruits biriyani recipe
Ingredients required for Soya chunks & jackfruits biriyani: (for 4 persons)
1) 1 cup raw jackfruits cut into small cubes
2) ½ cup soya chunks
3) 1/3 cup green peas
4) 2 large onions
5) 5 cloves garlic
6) 2 inches piece of ginger root
7) 6 green chilies
8) 1 large tomato or two small tomatoes
9) 2 red chilies
10) 2 bay leaves
11) 8 green cardamoms
12) 2 tsp shahi jeera/black cumin
13) 2 anises
14) 8 black pepper
15) 6 cloves
16) 2 inches piece of cinnamon
17) 1 tsp turmeric powder
18) 2 tsp chili powder
19) 2 tsp coriander powder
20) 1 tsp cumin powder
21) 2 tsp Kashmir chili powder
22) 1 1/2 tbsp biriyani masala
23) 1 tsp garam masala
24) 1 tbsp yogurt
25) 2 tbsp coriander leaves
26) 1 tbsp mint leaves
27) 2 tbsp cashew
28) Few almonds (optional)
29) 1 tbsp tamarind juice
30) 1 tbsp milk
31) 1 pinch saffron
32) 1 & ½ cup Basmati long rice
33) 7 tbsp vegetable oil
34) 4 tbsp ghee
35) Salt to taste
Process of making soya chunks & jackfruits biriyani:
1) Wash 1 ½ cup rice and add 3 times of the water in it and cook it in medium flame, add 1 tbsp ghee, add 1 tsp shahi jeera, add 1-inch piece of cinnamon, add 4 green cardamoms, add 4 black peppers, add 2 cloves and add 1 anise. Cook the rice till it is 60% done.
2) Heat a kadai, add 2 tbsp of oils, add 1 large onion cut into long slices. Fry these onions till it colors brown. Then dry in napkin and keep aside.
3) Heat a cooking pot, add ½ cup of soya chunks, add 1 tsp salt, 2 cups of water, few drops of oil. Cook for 10 minutes. Then drain the water and dry out the soya chunks.
4) Heat the same kadai in medium flame, add 1 tbsp oil, fry the jackfruits with a pinch of turmeric powder and salt. After 10 minutes of frying, keep it aside.
5) In the same kadai, add 1 tbsp of oil, add soya chunks and 1/3 cup green peas, fry them for 5 minutes with a pinch of turmeric and 1/4th tsp of salt. Then keep aside.
6) In that same kadai, add 1 tbsp oil, add ½ onion cut into small cubes, add 5 cloves garlic, add 2 inches piece of ginger root, add 4 green chilies, add 1 tomato cut into 4 pieces, add 2 red chilies. Sauté it for 3 minutes in medium flame and then cool it completely. Grind these and make a smooth paste. keep it aside.
7) Heat the same kadai in medium to high flame, add 2 tbsp of oil and 1 tbsp ghee.
8) When the oil is heat enough, add 1 tsp shahi jeera, add 4 green cardamoms, add 1-inch piece of cinnamon, add 1 anise, add 1 bay leaf, 4 black peppers, 4 cloves.
9) After 2 minutes, add ½ of a large onion cut into long slices, sauté till is brown in color.
10) Now add the masala paste, sauté till it release the oil.
36) Add 1 tsp turmeric powder, 2 tsp chili powder, 2 tsp coriander powder, 1 tsp cumin powder, 2 tsp Kashmir chili powder, 1 tbsp biriyani masala, 1 tsp garam masala, a little salt. Sauté these till the raw small of spices go off.
11) Now add all vegetables, mix well.
12) Add ½ cup of water, cook it in low to medium flame. Then add 1 tbsp yogurt and mix well.
13) Check out the salt, if it is needed, then add more. Mix well.
14) Cook the vegetables till it is 80% done.
15) Now start take a cooking pot, grease with ghee, add a layer of rice, then add a layer of cooked vegetable masala, put ½ tbsp of ghee on top of it, sprinkle some (fried onions, coriander leaves, mint leaves, a little biriyani masala, few fried cashew), then add another layer of rice on top of it, add again a vegetable masala layer, sprinkle some (fried onions, coriander leaves, mint leaves, a little biriyani masala, few fried cashew), add 1 green chili cut into small pieces (optional), add few almonds (optional), add another tbsp of ghee, sprinkle 1 tbsp of tamarind pulp, sprinkle the mix of 1 tbsp milk & a pinch saffron on top of it.
16) Cover the cooking pot, airtight with wheat dough as like the picture shown below.
17) Heat a cast iron skillet, add 1 cup of water, keep the flame in low mode, keep the biriyani pot on it. Cook the biriyani for 20 minutes in low flame.
18) Then switch off the flame. Open the pot when you are ready to eat.
Dahi baigan recipe
Ingredients required for Dahi baigan: (for 2 person)
1) 1 large egg plant/ brinjal, slices into round shape.
2) ½ tsp salt for mixing with egg plant
3) ½ tsp turmeric powder
4) 3 tbsp vegetable oil for frying egg plants
5) 2 tbsp yogurt
6) ½ tsp mustard seeds
7) 2 red chilies
8) Few curry leaves
9) 1 tsp oil for tadka
Process of making Dahi baigan:
1) Mix previously cut egg plants with ½ tsp of turmeric powder and ½ tsp of salt.
2) Heat a pan, fry the egg pants in both side till these are slightly brown.
3) In a bowl, add 2 tbsp yogurt, add 2/3 cup of water, add a little salt as per your taste, mix well.
4) Heat a tadka pan, add 1 tsp oil.
5) When the oil is hot enough, add mustard seeds, red chilies, curry leaves. Sauté till the mustard seeds splutter. Then add a pinch hing/ asafetida.
6) Switch off the stove, add a pinch of turmeric powder, a pinch chili powder, mix well.
7) Add the tadka in the yogurt bowl, mix well.
8) Now add fried egg plants and it is ready to serve.
Sooji halwa recipe
Ingredients required for sooji halwa: (for 2 persons)
1) 1 cup sooji
2) 1/3 cup of sugar
3) 2 tbsp ghee
4) 1 pinch salt
5) 1/3rd cup cashews
6) 1/4th cup raisins
7) 2 green cardamoms
Process of making sooji halwa:
1) Heat the pan, add 1/3rd tbsp ghee, add 1/3rd cup cashew and fry it till it is brown, keep aside.
2) In the same pan, add 1/4th cup raisins, fry till it is lightly brown in color, then keep aside.
3) Mash the green cardamoms.
4) Heat the same pan in low to medium flame, add sooji, roast it till it looks brown. Add 1 tbsp of ghee and mix again.
5) Add sugar and mix well.
6) Add 1 ½ cup warm water, mix well.
7) Add a pinch of salt in it.
8) Keep on mixing everything when the sooji halwa looks little dry, switch off.
9) Now add roasted cashew, raisins, cardamom powder. And cover it. Ready to serve now.
