My 30 days of cooking diary -> Day 3

 Today I saw a dream about a food item. And I wanted to try that dish in breakfast. It’s kind of fusion of Indian and Italian food. These two types of foods have their own mouthwatering taste. And if we combine both of them then it multiplies the overall taste of the item. But I agree, it is little heavier for the breakfast. That’s why I compensated with lighter lunch menu in the afternoon. I prefer good food for the happy mood. And starting a day with a happy mood always makes the day more countable.

So, here it goes the Day 3: breakfast menu: -

 

Quesadilla with a twist




 Quesadilla with a twist recipe


Ingredients required for outer layer (for 7 no.):

 

1) 1 & ½ cup whole wheat flour

2) 2 handful of spinach cut into small pieces

3) 1/4th tsp turmeric powder

4) 1/4th tsp garam masala

5) 1/4th tsp mango powder

6) ½ tsp coriander powder

7) ½ tsp chili powder

8) 1 tsp salt (as per your taste)

9) 9 tsp olive oil

 

Ingredients required for inside stuffing (for 7 no.):

 

1) 1 cup mozzarella shredded cheese

2) 1 cup boiled corn (boil the corn with a pinch of salt for 1 minute)

3) 2 green chilis

4) ½ tsp chili flakes

5) ½ tsp white pepper powder

6) ½ tsp oregano leaves




 

Process of making quesadilla with a twist:

 

1) For outer layer, first mix spinach, turmeric powder, chili powder, coriander powder, garam masala, mango powder and salt.

2) Then add wheat flour in it and knead a dough with using ½ cup of warm water.

3) Apply 2 tsp of oil on dough.

4) Cover it and let it rest for 10 minutes.

5) Make 7 dough ball out of it.

6) Roll evenly using rolling pin and give a round roti shape to each dough ball.

7) Heat the tawa and add the rolled roti.

8) Cook both side of the roti.

9) Spread 2 tbsp shredded cheese, 2 tbsp corn, a little cut green chili, a pinch of pepper powder, a little chili flakes and oregano leaves.

10) Close the stuffing with the other half of the roti.

11) Cook for another 1 minute.

12) If you want, you can apply slight butter on top of the quesadilla and serve with tomato sauce.

 

 

Day 3: Lunch menu: -

 

Khichidi, Dahi chala, Kurkure Bhindi, Papad & Pickle

 


 

Khichidi recipe

 

Ingredients for khichidi:

 

1) 1 cup raw rice

2) 1/3rd cup of raw split yellow moong dal

3) ½ inch cinnamon

4) 1 black cardamom

5) 1 small bay leaf

6) 2 tbsp ghee

7) ½ tsp turmeric powder

8) 1 tsp salt or as per your taste

9) 3 cups of water (the water quantity can be adjusted according to your choice of thickness  of the khichidi)

10) 1 tsp cumin seeds

11) 2 red chilies


Process of making khichidi:

 

1) Heat a cooking pot in medium flame.

2) Add 1/3rd cup moong dal and 1 cup raw rice and fry it till the dal & rice turn slightly brown. Then wash it for 3 times and rest aside.

3) Heat the cooking pot and add 1 tbsp ghee, once it is hot enough, add 1 bay leaf, 1 black cardamom, ½ inch cinnamon.

4) After 1 minute, add previously washed dal & rice in the pot. Fry everything for another 2 minutes.

5) Add 3 cups of water in the cooking pot and ½ tsp turmeric powder and salt to taste. Cover the pot.

6) Let it boil in medium flame.

7) When the rice and dal are fully cooked, switch off the stove.

8) Heat a tadka pan, add 1 tbsp ghee, add 1 tsp cumin seeds and 2 red chilies.

9) When the cumin starts spluttering, add the tadka in the boiled dal rice pot.

10) Cover the khichidi and boil it for another 2 minutes in the stove in low flame.Switch off the stove and serve hot.


Dahi Chala recipe

 

Ingredients for dahi chala:

 

1) 2 tbsp yogurt

2) 2 pinch turmeric

3) 2 pinch chili powder

4) 2 pinch chaat masala

5) 1 pinch garam masala

6) Salt to taste

7) 1 pinch hind/asafetida

8) ½ tsp vegetable oil

9) 1/4th tsp cumin seeds

10) 1/4th tsp mustard seeds

11) 2 red chilies

  

Process of making dahi chala:

 

1) In a bowl, add 2 tbsp dahi/yogurt and 1 cup water, mix well

2) Add 1 pinch turmeric powder, 1 pinch chili powder, 2 pinch chaat masala, salt to taste

3) Mix everything properly

4) Heat a small cooking pot in medium heat, add ½ tsp vegetable oil, 1/4th tsp cumin seeds, 1/4th tsp mustard seeds, 1 pinch hing and 2 red chilies

5) When cumin seed and mustard seed start spluttering, switched off the stove. Then add 1 pinch turmeric powder, 1 pinch chili powder and 1 pinch garam masala. Mix properly.

6) Then mix the tadka to the yogurt bowl and mix everything properly.

7) Warm the dahi chala in low flame for 1-2 minutes. Then serve with khichidi.

 

 

Kurkure bhindi recipe

 

Ingredients for Kurkure bhindi:

 

1) 10-15 Okra/Ladies finger/bhindi slice in 4 pieces.

2) 1/4th tsp turmeric powder

3) 1/4th tsp chili powder

4) 1/4th tsp mango powder

5) ½ tsp garam masala

6) 1/4th tsp chaat masala

7) 1/3rd cup besan/gram flour

8) 2 tbsp olive oil/vegetable oil for frying

 



 

 

Process of making Kurkure bhindi:

 

1) Make a mix of turmeric powder, chili powder, garam masala, chaat masala, mango powder and salt.

2) Spread that mixture on top of the okra. And mix everything properly. Then sprinkle the besan/gram flour on the masala okra.

3) Heat a pan, add 2 tbsp oil.

4) Once oil is heat enough, add the masala okra. Let the stove flame be in low to medium.

5) Fry the okra and do not cover it.

6) Once the okra is fully cooked, switch off the stove. It’s ready to serve now.

 

 

Note: - The papad and pickle are store bought.
