Today when I got up in the morning, I started thinking what to make for breakfast or lunch. I already had so much leftover food from yesterday. And I usually don’t prefer to trash any food. So, my creative mind clicked and said do something different. Then suddenly I came to a dish called “leftover food tikki”. The output dish was just out of my expectation. Then in lunch time, me & my family were feeling to eat something light and something sweet. Thus, I decided the menu accordingly. Henceforth, my happy mood came back from the good food as I repeat always. I hope you would all like my today’s food menu.
Here, it goes the Day 7: Breakfast menu: -
Leftover biriyani tikki & Lemon-grass tea
Leftover biriyani tikki recipe
Ingredients required for the leftover biriyani tikki: (for 7 no.)
1) 1 & ½ cup of leftover soya chunks & jackfruit biriyani (*check out the recipe from my Day 6 lunch menu)
2) 1 small onion finely chopped
3) 2 green chilies (you can remove the seed’s portion) cut into small pieces
4) Salt as per your taste
5) 1 handful finely chopped coriander leaves
6) 1/2 tbsp Maggie masala
7) 2 tbsp corn flour
8) 3 tbsp breadcrumb
9) Canola oil to fry
Process of making leftover biriyani tikki:
1) Slightly mash the biriyani, add chopped onions, add chopped green chilies, add coriander leaves, Maggie masala, add corn flour, add salt if it it’s needed. Mix well.
2) Make 7 tikki balls and slightly pat it.
3) Heat oil in cast iron or non-stick pan.
4) Coat the tikkis with breadcrumb and sallow fry them, till both sides are golden brown in color.
5) Once done, transfer the tikkies in a kitchen towel so that excess oil is absorbed. Place the tikkies in serving plate along with hot tea. It tastes very well.
Lemon grass tea recipe
Ingredients required for lemon grass tea: (per person)
1) ½ cup milk
2) 2/3 cup water
3) 1 tsp tea powder
4) 2 tsp sugar or more as per your taste
5) ½ tsp dry lemon grass or the fresh one
Process of making lemon grass tea:
1) Warm the milk and keep aside.
2) Heat the water in medium flame, add sugar, tea powder, lemon grass and let it boil for 4-5 minutes.
3) Add the warm milk, mix well, stir occasionally.
4) Wait tea to steep.
5) Strain and pour into small cups or tea pot.
Day 6: Lunch menu: -
Fruits & nuts salad and vanilla ice-cream with chocolate dust
Fruits & nuts salad recipe
Ingredients required for fruits & nuts salad: (for 2 persons)
1) 1 Banana slices into small pieces
2) ½ cup blue berries
3) 5 to 6 strawberries each cut into 4 pieces
4) 1/3rd cup almonds
5) 1/3rd cup walnuts
6) 2 pinch of white pepper powder (as it only gives flavor)
7) 1 pinch salt
*Note: you can add any fruits and any nuts
Process of making fruits & nuts salad:
1) Mix all fruits and nuts very well.
2) Sprinkle white pepper powder and salt.
3) Then mix again properly and serve.
Vanilla ice-cream with chocolate dust recipe
Ingredients required for making vanilla ice-cream with chocolate dust: (for 4 persons)
1) 1 cup heavy whipping cream
2) 1 tsp vanilla essence
3) ½ cup powdered sugar
4) ½ cup grated coconut (optional)
Process of making the ice-cream:
1) Take a large bowl
2) Add 1 cup of heavy whipping cream
3) Beat the cream using an electric mixer until frothy
4) Add ½ cup powdered sugar, add 1 tsp vanilla essence and grated coconut while beating.
5) Then put it in any plastic box, Dressing the ice-cream with a chocolate dust (I took a dairy milk chocolate and grate it on top of the ice cream) cover it and keep it freezer for 30 to 45 minutes.
6) The ice-cream is ready to serve.
